Apple Pancake - German pancake with apples and Cinnamon

One of my favorite breakfasts is the Apple Pancake from a local small chain.  Long story short, I got to thinking and made my own version.  My family loves it!!!  Give it a try, it will take some time but I think it is well worth it.  Send me your comments.

Preheat a cast iron 10" frying pan (deep) in a 400F oven.

Ingredients

  • 1 stick of butter (8tbsp)
  • 4 eggs
  • 1 cup flour
  • 1 cup milk
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 2 apples - granny smith
  • 1 cup brown sugar
  • 2 tsp cinnamon
Method
  1. Combine and mix well, eggs, flour,milk, salt, and vanilla
  2. Melt 1/2 of the butter in the preheated frying pan
  3. Pour the flour mixture into the frying pan and place back in 400F oven for 20 minutes
  4. Peel, core and slice thin the apples
  5. Combine sugar and cinnamon
  6. Melt the remaining butter
  7. After 20 minutes in the oven cover the pancake with the apples then the sugar and drizzle with the melted butter
  8. Return it to the oven (400F) for another 20 minutes.
  9. Enjoy!!!
