Buffalo Chicken Dip

Buffalo Chicken Dip

Quick, portable and delicious! Perfect for potlucks, parties.picnics or anytime you are craving a savory snack with a little kick.

This dip can be prepared ahead of time and kept in the fridge until you need it.

Ingredients:

2 chicken breasts
1 8 oz. package of cream cheese
1 Cup of sour cream
1 Cup of Franks red hot*
3/4 Cup of shredded cheddar cheese

Preparation:

Take cream cheese out of fridge and set aside to soften.

Boil the 2 chicken breasts in a medium saucepan until cooked through, about 30 minutes. Remove chicken from pot and set aside to cool.

You will need an oven safe dish large enough to hold all of the ingredients, a 9"x 9" casserole dish is perfect.

When chicken has cooled enough to be handled shred both pieces completely, discard any fat or bad pieces. Shred until you have a very fine uniform texture. Place in casserole dish.

Add the cream cheese, sour cream, wing sauce and the shredded cheese to the chicken and mix together thoroughly.

Cooking:

Cook uncovered for 25-30 minutes or until heated through in a 350f oven. Remove from heat and let cool 10 minutes before serving.

That's it!!! serve with fresh tortilla chips!

*You can substitute the Franks Red hot with any yummy buffalo style sauce

Artichoke Spread or Dip - Muchies while BBQ'n

This is an easy dip that can be heated in a Crock Pot or in a 350 degree F oven.

I just got a call from a friend asking for this recipe. It is good and frankly can not be served enough. It is best served with tortilla chips but some like to serve it as a spread with crackers (Triskets are best)

  • Artichoke Hearts chopped w/ water drained (16oz-17oz drained weight)
  • Parmesan Cheese (8oz, grated)
  • Mayonnaise (1 and 1/3 cups)
  • Garlic Powder to taste
Mix all ingredients well.
Bake at 350 degrees F for 30 minutes, stir halfway through heating.
--------OR---------
Heat in a crock pot for 1 - 1.5 hours on high.
Note:
I have doubled and even tripled this recipe.
