Pancakes - The Morning Food of a BBQ Day

Let start off by saying........Pancake Mixes are for people that do not appreciate good food!!!!!

OK, That might be over stating things but think about it this way. Cooking time is the same for both Mixes and recipes from scratch so the only variable is the prep time. I would argue that the few extra minutes will be rewarded ten fold by those you are serving. So save the mixes for fundraisers and hiking trips and try this recipe.

I have been making this recipe for as long as I can remember.

Mix the following well with whisk
  • 3 cups of flour
  • 6 tbsp of sugar (white)
  • 3 Teaspoons of double acting baking powder
  • 1/2 Teaspoon of baking soda
In a mixer, whip
  • 3 eggs
  • 6 tbsp butter
  • 2 1/4 cups of milk
  • 1 teaspoon vanilla
Combine the dry and wet ingredients. Do not over stir.
Heat your griddle to medium. I use a large frying pan. Once it is hot, add butter to the pan and pour batter forming 3 inch rounds. Wait till bubbles form and remain on the top of the pancake, then flip. The second side does not take as long so watch it.

I cooked up a batch of these this morning for my family. We all agree that they are much better than the packaged mixes and the prep time is about the same. I find melting the butter for 45 seconds in the microwave makes the process much easier. The batch size makes enough for two meals for my family. Next I would like to try it with some other types of flower and substituting honey for the sugar.
